This is honey is mostly from black locust tree blossoms, but also a variety of other spring flowers such as dandelion, honeysuckle, and many others.

This Spring we were given a set of rare weather circumstances. The weather turned dry and calm right when the black locust trees bloomed. What would normally be a short lived bloom turned into three weeks of perfect foraging weather for the bees. The dry air also caused the bees to dry the honey more so than normal, and this is the thickest honey we've ever seen.

Black Locust honey doesn't usually crystalize, but if it does gently warm it up in warm water until it re-liquifies.
